Aussie breakfasts are set to be reinvented, with Tassal’s latest product set to rival a morning favourite.

The Tassie-based business — Australia’s largest producer of Tasmanian-grown Atlantic salmon — is introducing ‘Salmon Bacon’ to grocery stores across the country.

It’s touted as a healthier alternative to bacon, but promises to be just as tasty.

The evolution of smoked salmon is easy to cook; all that’s needed is a quick pan-fry for two minutes on both sides and it’s ready to eat.

Leading dietitian and Tassal ambassador Susie Burrell says Aussies seeking new ideas to impress the family at breakfast or for those looking to reduce their red meat intake should give the product a try.

SWEET POTATO & CARROT FRITTERS WITH SMOKED SALMON

Ingredients

70g Tassal Smoked Salmon or Tassal Salmon Bacon

150g Small Sweet Potato, grated

1 carrot, grated

Sweet potato and carrot fritters
Sweet potato and carrot fritters

3 tbsp Flour or almond meal

1 egg

1 tsp Parsley

1 Tbsp Olive oil

1 cup Kale

Method

STEP 1: Combine sweet potato, carrot, almond meal, egg, cumin, parsley, salt and pepper together and mix well.

STEP 2: Heat oil in a non-stick pan on medium heat and drop tablespoonfuls of mixture into pan to cook. Cook for approximately 3 minutes each side, or until golden.

STEP 3: When fritters are cooked, add kale to pan to warm and wilt slightly. Top fritters with kale and smoked salmon or salmon bacon

WAFFLES WITH SALMON BACON, ASPARAGUS & MAPLE SYRUP

Ingredients:

Waffles:

2 cups flour

4 tsp baking powder

1 tsp salt

2 tbsp sugar

2 eggs

375ml warm milk

75g butter, melted

1 tsp vanilla extract

OR

12 store purchased waffles, toasted

250g cream cheese, at room temperature

200g Tassal Salmon Bacon

2 bunches baby asparagus, blanched

250ml maple syrup

sprigs of fresh dill, to garnish

Method

STEP 1: In a large bowl sift together flour, baking powder and salt. Add sugar and stir through. In a separate bowl beat eggs, milk, butter and vanilla together. Pour the milk mixture into the flour mixture and whisk until well blended.

STEP 2: Preheat a waffle iron to medium hot and lightly spray with oil. Ladle the batter into the waffle iron and cook the waffles until golden and crisp. Turn waffle iron to brown and crisp the top side. Remove cooked waffles from the waffle iron and keep warm. Repeat with remaining batter until all used.

STEP 3: To serve; place a good-sized dollop of soften cream cheese in the centre of each waffle and top with a slice of Tassal Salmon Bacon, asparagus spears and a drizzle with maple syrup. Finish with a few sprigs of dill and serve immediately. Delicious served with chopped cherry tomatoes and a squeeze of lemon if desired.

FIG, GOAT CHEESE & SALMON BACON ON SOUR DOUGH

Ingredients

4 x thick slices sour dough mixed grain bread, brushed with olive oil, and toasted on a BBQ grill plate

80g (4 cubes) Meredith Goat Cheese

125g cream cheese, room temperature

140g Tassal Salmon Bacon

2 figs, cut into quarters

To serve:

2 tsp honey

2 tsp chopped roasted hazelnuts

pot fresh micro herbs, to garnish

Method

STEP 1: Combine goat cheese and cream cheese in a bowl and mix well.

STEP 2: Heat a non stick pan over medium-heat and cook the slices of Tassal Salmon Bacon for 3 minutes each side, or until golden and crisp. Remove from heat.

STEP 3: Generously spread each slice of toasted sour dough with the goat cheese mixture. Arrange a slice of Tassal Salmon Bacon on top and half a fig. Drizzle with a little honey, sprinkle with hazelnuts and garnish with micro herbs. Serve immediately.
