Tasmanian foodies eagerly await new offering from Garagistes, Pilgrim chefs

KEEN Tasmanian foodies are eagerly awaiting the newest offering at Brooke St Pier.

WHAT do you get when you mix a chef from Garagistes, a chef from Property of Pilgrim and arguably the best water view in Hobart?

Diners will find out in a few months when Glenn Byrnes and Christian Ryan join forces for a new restaurant at Brooke St Pier.

To be called Aloft, the venue would feature bar seats overlooking the kitchen, a changing menu and a casual ambience, Mr Ryan said.

“We aim to play the music that we enjoy in a comfortable open space while we serve people what we consider to be really great food,” he said.

“The kitchen will put together flavours depending on the catch of the day, be it from the sea, forest or farm.

“Some items will potentially stay around for a single day or maybe a week.”

The talented young chefs have been good friends since working together at Melbourne’s Taxi Dining Room, where Mr Byrnes was head chef before moving on to Rockpool and then Hobart to work at Garagistes.

Mr Ryan has earned a stellar reputation at Pilgrim for dishes including slow-roasted alpaca and his summer favourite — spring peas and broad beans.

They will be joined by co-owner Heiki Stanley, also from Pilgrim, who will run front of house with Madeleine Paske, from MONA’s The Source.

Mr Ryan said the restaurant would open nights only initially.

The fitout started on Thursday and the team hopes to open in October.
