A NEW high-end cocktail bar and restaurant with an Iron Chef star designing the menu and $50 cocktails will soon hit Hobart’s waterfront.
The Glass House at the end of the new Brooke St Pier will be opened by the Islington Hotel owners next month and will have a Japanese-born, Melbourne-based executive consultant chef, Ikuei Arakane (known as Kin San).
It will feature a cocktail bar, private function room and 120-seat restaurant serving a Japanese-inspired menu with all fresh, Tasmanian ingredients.
Manager Alex Watson has a great deal of experience opening restaurants, having Melbourne’s Nobu, Maze by Gordon Ramsay, and Sake in Melbourne under his belt at the age of 27.
“Tourism is prolific and the average Hobart punter is pretty well travelled, now so we’re looking at the higher end of the market with $50 cocktails, bespoke glassware and four types of ice. We think Hobart needs that and hasn’t had it before,” he said.
Kin San is a regular guest on Japanese cooking show Iron Chef and has hosted a Japan v Australia version.
He has lived in Melbourne for 26 years and has three restaurants there.
He said he was hoping to do something different at The Glass House using delicate seasoning to let natural flavours shine through.
He has developed a vegie garden where he grows produce to use in his cooking.
“If I can’t get my produce I will make it, either grow or cook,” he said.
“My signature dish is an oyster, it’s so different. It tastes like a dessert. It has pear, then a lime, lemon and orange dressing with vodka granita.”
Owners of the Islington Hotel, David Meredith and John Goodyear, have long wanted a waterside venue.
They live overseas, frequent five-star cocktail bars and want to deliver a high end equivalent in Hobart.
