'I fed my kids for 3 days for just $3': Resourceful mum shares budget meals

A single mum’s post in the Mums on a Budget Australia Facebook group has gone viral, amassing over 1.4k likes and hundreds of comments praising her resourcefulness after falling on hard times.
She detailed how she stretched her shoestring budget over three days and made her family of three two different delicious and healthy meals.

"Fed is best"
The mum shared, "I’ve been umming and ahhing about posting this for a few hours because no doubt there will be mixed emotions on this one, but hoping this would help with some basic ideas for anyone else!
"Sometimes being a single parent is hard, like crying on the floor because you have literally no meat or fruit left in your house and a negative bank account kind of hard."
The mum says she had to scrounge her car on the weekend for gold coins before going to the supermarket.
"Basically, I needed to buy anything I could make for dinner to feed three, for the next three days, on $3,” she revealed. "Makes sense that bad things come in threes!😅"
With that $3, she bought penne pasta for 90 cents and a 1.3kg Kent pumpkin for $2.05, which she used to make two entirely different meals, both with eight servings each.
She explained: "I made the obvious pumpkin soup, made with herbs and leftover veggies I already had. And then the pasta, which was made with the leftover soup as a sauce, fried, and added some kabanos sausage, carrots, rosemary, and garlic pulled from our garden.
"Sometimes just fed is best! Two smiling happy kids that have been raving about the pasta being the best meal ever."

The response from the community was overwhelmingly positive, with many relating to the struggles of budget living.
