Dark Mofo: Feast of ideas for midwinter

SOME of the country’s most talented chefs are teaming with Tasmania’s finest to cook up something unique for next month’s Dark Mofo Winter Feast.

SOME of the country’s most talented chefs are teaming with Tasmania’s finest to cook up something unique for next month’s City of Hobart Dark Mofo Winter Feast.

This year’s Winter Feast has a focus on flame-grilled street food, and four expert teams are taking a collaborative approach to devising original menus for Hobart’s popular midwinter communal banquet.

Guest chefs Victor Liong, Shannon Martinez and Jerry Mai from Melbourne and Christopher Hogarth from Sydney are each partnering with a Tasmanian chef and a local business to design a new dish especially for the Winter Feast.

Each dish must be easy to eat while walking around, showcase ethical Tasmanian winter produce, and be cooked on charcoal barbecues.

“I want this year’s Winter Feast to offer food that you can’t get anywhere else — and lots of it,” Winter Feast curator Jo Cook said.

“So we are focusing on dishes that are being designed specifically for this event. When you bring three chefs together you’ll get an outcome that’s three times as good.

“I want to see chefs sharing their ideas, expertise and cultural backgrounds, working together to create something that is really unique.”
