A new cafe featuring avo on toast and smoked salmon scrambled eggs has transformed the space which was left vacant by a former favourite Mermaid Beach venue.

A new cafe has transformed a beachside space left vacant by a former favourite Mermaid Beach venue.
Broadbeach’s Elk Espresso owner Andrew Whiting opened a sister eatery called Sunnyboy on Wednesday on Hedges Ave in Mermaid Beach.
The space had been empty for nine months after Cafe on Hedges suddenly closed, leaving customers in shock and staff without jobs.
Mr Whiting said he was more than pleased to fill the gap with his new project, which was “inspired by growing up as a kid in summer”.
“We wanted to create a fun beachside cafe with personality and drew inspiration from the iconic Sunnyboy ice block colours (as well as giving) a nod to the old Mermaid Beach era,” he said.
Mr Whiting said taking over the beachside venue was a “full circle moment” for him, marking 16 years since he owned his first cafe in Mermaid Beach, Vintage Espresso.
“I used to drive past the site on my way to Elk Espresso going ‘I would love to sink my teeth into that site’,” he said.
“When we sold Vintage Espresso, I really missed the beautiful Mermaid Beach community and now I’m so excited to be a part of the fabric again, creating a home away from home for them.”
The menu will include the Sunny Scramble — soft scrambled eggs, smoked salmon and creme fraiche.
The lunch menu boasts steak sandwiches, a Nashville chicken burger and even a $49 one-hour bottomless mimosa deal.
“Culinary appetites will be satiated by a seasonally evolving menu and coffee by Parallel Roasters will pour like liquid gold,” a Sunnyboy statement said.
