Barbecue tips

Toowoomba pitmaster Deniz Altintas has shared his biggest tips for entertainers across the region to jazz up platters for guests this Easter weekend.

“The barbecue is the ideal way to show those big share meals for lots of people,” he said.

“I like to go for little nibbles with wings, chicken strips and beef chopped up and put on the smoker or grill.”

The pitmaster encouraged residents to experiment with different flavour combinations, suggesting a cool blue cheese dip, ranch or yoghurt sauce for spicy chicken wings and opting for a spicy dipping sauce for the sweet meats.

Meanwhile, seafood lovers can create a mouth-watering meal featuring a whole baby snapper stuffed with cherry tomatoes, herbs, butter, and shallots cooked on the grill and neatly wrapped in foil.

“When it comes to seafood it can be fairly delicate so it’s usually a fairly hot and quick cook on the barbecue,” Mr Altintas said.

“If you have lobster there’s a lot of protection from that heat source and that goes perfectly with a bit of garlic and butter.”

Sweet-tooth lovers can finish it off by popping a barbecued chocolate hot cross bun on the grill with the added sugar high of melted chocolate eggs, seasonal berries, marshmallows, honeycomb shards sprinkled on top.
