Kajoku owner Jeff Brady opens Kajoku Backdoor in Toowoomba CBD

A longstanding Toowoomba restaurant owner has unveiled his latest project, which includes a new Korean sweet treat he’s hoping customers will love.

After 10 years owning one of Toowoomba’s most popular Asian eateries, Jeff Brady is ready for residents to try some tasty treats in his latest laneway venture.

The owner of Kajoku Korean BBQ is using the Carnival of Flowers to launch new eatery Kajoku Backdoor, located at the rear of the existing restaurant facing Club Lane.

The cafe’s menu offers a combination of Australian, Korean and Japanese cuisine, takeaway coffee and sweet treats.

The most notable new item is bingsoo, a Korean shaved milk ice dessert that comes with a variety of flavour combinations.

“It’s a sweetened milk base, so it’s often described as like snow in texture and then whatever we put on top of it,” Mr Brady said.

“There are traditional flavours like sweetened red bean and the vegetable flavour of matcha, but other versions are done with frozen and fresh fruits, Lotus Biscoff, Oreo and there will be a few more as we come up with them.”

Mr Brady has pulled out all stops with its entry in #treats, the popular foodie trail that coincides with the Carnival of Flowers by offering limited-time dishes from some of Toowoomba’s most popular restaurants.

Kajoku Backdoor’s entry is a bingsoo in the shape of Mount Table Top/Meewah, including sweetened red bean for volcanic magma, roasted soybean powder for the dirt, matcha powder for the greenery, Cocoa Pops for the boulders, vanilla ice-cream cloud and two Tiny Teddies as hikers.

“Our opening date came close to the Carnival of Flowers and we immediately thought of making (a bingsoo) out of a local icon in Table Top,” Mr Brady.

“It was to make it interesting and fun, which is part of what we try and do with everything.”

The launch date of Kajoku Backdoor on August 22 was also the 10th anniversary since Mr Brady opened the original restaurant back in 2014.
