Big night out with Karmichael Hunt, eh? Don’t be daft. It’s panela sugar – artisanal stuff made by cane farmers near Bogota. It’s from a new range, Sugars of the World, which is big on provenance and terroir (and guaranteed, in other words, to make middle-class foodies swoon).
Tasting notes: Light brown colour; soft, sticky texture. Deeply pleasing rum and molasses notes on the nose. Heaps of molasses plus licorice on the palate. Wow. It’s sensational.
Other highlights in the range? A Mexican sugar made from agave, and an Indonesian one made from coconut blossom.
Verdict: They’re interesting and delicious. Try the lot! But don’t blame us if all your teeth have fallen out by Christmas.
