What is it?
A $195 Pete “Paleo” Evans branded kit for fermenting vegetables. It harnesses a wonder of nature: the breakdown/transformation of organic matter by microbes.
My grandpa had one too! He called it a “compost heap”. I’ll take that as a comment. In fact, fermentation underwrites many foods, including bread, yoghurt and chocolate. (Pete’s Paleo tribe wouldn’t touch any of that devil’s work, though.)
What’s in the kit? A beautiful 1.5l glass jar with an airlock top and a light shield, starter culture and other gizmos. It’s designed to make fermenting vegies “easy, safe and reliable”.
What did you try? “Beginner’s sauerkraut”. It was satisfying to make, and delicious. It’s meant to boost healthy gut flora, too. But be warned, you’ll be floating the duvet at night …
