Our critics have visited more than 1000 restaurants in the past year to choose the 50 hottest places in the country.

Our restaurant critics John Lethlean and Necia Wilden and their team have visited more than 1000 restaurants in the past year to bring together this list of the 50 hottest places in the country.

Their annual report on the state of dining has some notable findings: NSW, propelled by Sydney, is hotter than Victoria by a considerable margin; South Australia is powering with a record seven entries; and chefs everywhere are pushing the boundaries. Cow’s udder, cured and shaved, with a sweet corn custard? Wallaby blood pikelets?
