WHAT is it?
A wet dream for cashed-up MasterChef tragics.
How so?
Because sous vide machines - which gently cook vacuum-packed cuts of meat in hot water - have until now been the playthings of top chefs. Now anyone can have a go.
How does it work?
First, use Breville's Fresh Keeper device (reviewed here two weeks ago) to seal your meat in a plastic pouch. Place in a rack inside the sous vide machine, set the water temperature and the timer, and that's it.
How long does it take?
The longer you cook, the more tender the result. The timer goes up to 99 hours.
What's that for?
Horns, maybe. Or hooves that just melt in your mouth.
