Dinner’s easy with one pot for pasta and prawns

Make dinner a breeze with this one-pot creamy Cajun prawn pasta. Not only is it low in WeightWatchers Points but it’s the perfect dish for busy evenings — easy, absolutely delicious and less washing up!

ONE-POT CREAMY CAJUN PRAWN PASTA

Serves 4 / Prep 10 minutes / Cook 25 minutes

INGREDIENTS

  • 210g penne pasta
  • 1 cup (250ml) vegetable stock, made with 1 stock cube
  • ⅓ cup (80ml) skim milk
  • 1 tablespoon plain flour
  • ¼ cup (60g) light cream cheese
  • 2 teaspoons olive oil
  • 450g peeled raw prawns, deveined
  • ½ red onion, finely chopped
  • 1 red capsicum, sliced
  • 200g cherry tomatoes, halved
  • 2 garlic cloves, finely chopped
  • 2 teaspoons Cajun seasoning
  • 120g baby spinach leaves
  • ½ lemon, juiced

METHOD

1. Cook pasta in a large saucepan of boiling, salted water following packet instructions, until just tender, then drain well.

2. Meanwhile, add stock, milk, flour and cream cheese to a small blender and blitz until combined.

3. Heat half the oil in the same pan over high heat. Add prawns and cook for 1–2 minutes each side, until charred but not cooked through. Remove from pan and set aside.

4. Heat remaining oil in the same pan over medium heat. Add onion, capsicum, tomatoes, garlic and seasoning and cook, stirring occasionally, for 5 minutes or until softened. Add cheese mixture and simmer for 4 minutes or until sauce has slightly thickened.

5. Return pasta and prawns to pan, along with spinach and lemon juice and cook, tossing, for a further 2–3 minutes, until prawns are cooked through and spinach is wilted. Divide pasta among 4 serving bowls and serve.

TO REFRIGERATE

Store pasta in a reusable container for up to 2 days. Reheat in the microwave until heated through.

COOK’S TIP

Substitute the penne with other pasta, such as rigatoni, fusilli or orecchiette.
