How many hospitality professionals does it take to change a croissant? According to Weirdoughs, a vegan pastry and ice-cream shop opening on November 14 on Flinders Lane, the answer is eight.

Behind it are Mark and Attil Filippelli (Matcha Mylkbar, il Fornaio, Mark & Vinny's), three Lord of the Fries co-founders, and Ruby Shine and Shaunn Anderson (Feast of Merit).

The eighth team member is former Vue Group executive pastry chef Kane Neale, who has spent 18 months perfecting the vegan croissant using "butter" made from macadamia, cashew and coconut oil.

For the opening menu they'll be selling classic croissants and riffs on the theme, including golden turmeric custard doughnuts and croissant cubes.

Each month brings a new specials list, kicking off with a Thanksgiving theme. After dark on Friday and Saturday, pepperoni pizza croissants and Aperol spritz doughnuts will be available until 2am. "Everyone is looking for experiences at night that don't necessarily involve drinking or spending a lot of money," says Filippelli.

There are also "Weird I-Screams" – think dairy-free lavender and candied eggplant "ice-cream", served in a croissant cone. St Ali has roasted coffee especially for nut "mylks", or there's flavoured chai and a range of hot fudge cacao.

Interiors by Russell & George give the small space (only eight stools) a carnival theme, thanks to novelty mirrors and a UV light-activated artwork that comes to life at night.

With staff in baby pink coveralls and DJs in the evening, even vegans will feel like a kid in a candy shop.
