Hospitality veteran Stacy Kewish-Lucas has embarked on an all-Aussie adventure, opening rooftop bar Land of Plenty in the Carlisle Street site that until recently housed Vietnamese restaurant Uncle.

The drinks list is entirely Australian – local wines, beers from Colonial Brewing in Port Melbourne, among others, and spirits such as Maidenii vermouth and Iridium Rum from the Mount Uncle distillery in Northern Queensland.

And for ballast, there's a menu that makes use of a 1.6-metre charcoal grill and Indigenous ingredients such as wattleseed, saltbush and sea succulents.

London-born chef Sam Wills is chucking prawn and asparagus skewers, miso-glazed eggplant and Basque-style chicken thighs on the barbie, along with a range of steaks served with rosemary potatoes and slaw.

The rooftop bar has been kitted out with timber high-top benches and palms, and a mural by Australian artist LeGrizz covers one wall.

Downstairs, barista Jessie-Ann Keys is running Billy T's as a daytime operation, pouring Bean Cartel coffee and slinging toasties such as the reuben with house-cured ironbark-smoked pastrami.

Land of Plenty is open Wed-Thu 5pm-late, Fri-Sun noon-late. Billy T's is open Mon-Fri 7am-3pm.
