Mega food venue the Paper Mill opens in Liverpool, Sydney
Hot on the heels of Rooty Hill's West HQ ramping up its food offerings in July, western Sydney has another multimillion-dollar food hub pulling out every bell, whistle and wood-fired oven.
Paper Mill Food opens Saturday, August 10 with four restaurants under one heritage saw-tooth roof on the banks of the Georges River in Liverpool.
The 570-seat space operated by hospitality specialists Karima Group honours the site's former life as an industrial mill with period features such as original brickwork and modern updates including a mosaic tile floor, Carrara marble and cast-iron sculpted to resemble 19th-century ovens.
Dining options range from a cafe and bakery to an a la carte restaurant specialising in seafood and meat cooked over charcoal.
"We spent considerable time researching what we were going to put into this space, as we wanted to make sure it was what the community of Liverpool and greater western Sydney have been wanting and deserve," said Paper Mill Food's general manager, Jason Chow (ex-Aria and Chiswick).
Here's what to expect from the four unique food offerings helmed by executive chef Nader Shayeb, formerly of Surry Hills' Nour restaurant.
Charcoal Joe's Lebanese Charcoal Chicken
Paper Mill claims Joe's serves the best Lebanese charcoal chook in Sydney. A half-chicken and chips will set you back $14 and there are also burgers and shish including a merguez-spiced veal number.
Firepit
Two wood-fired ovens, a rotisserie and flame grill are at the heart of Paper Mill's flagship restaurant. Menu highlights include Clarence River octopus with white bean puree and roast capsicum; charred leek and blue swimmer crab salad with pickled kohlrabi; chicken wings smoked over applewood and a considerable offering of steaks cooked over coals.
Georgie's Pizzeria & Bar
Does exactly what is says on the pizza box – negronis, martinis and hand-stretched, wood-fired pies such as the "Arabica" with sujuk, lamb kofta and green olives.
Shepherd's Lane Cafe & Dessert Bar
A family-focused crowd pleaser where breakfast bowls share menu space with zaatar and smoked garlic manoush. Nutella waffle fans are well serviced.
