Falco Bakery opens in Collingwood, with Rockwell's double patty smash as a pie
If you've been mourning the loss of Rockwell and Sons' double patty smash burger, you'll be pleased to hear it's back – in pie form – at newly opened Falco Bakery on Smith Street.
Casey Wall and Manu Potoi, who closed Rockwell in June, are joined in this hot new venture by Michael Bascetta (who co-owns Bar Liberty and Capitano with Wall and Potoi), and new business partner and head baker Christine Tran.
Since they opened on December 11, Tran, who's done time at the likes of Loafer Bread, Tivoli Road Bakery and San Francisco's Tartine, has been baking everything from malted porridge loaves to fougasse (a patterned French flatbread similar to focaccia) and fruit bread.

As well as takeaway loaves and laminated pastries (pastrami croissants and plum or cherry danishes), 20 seats allow you to dig in for pies, sausage rolls, fat sandwiches, a sourdough English muffin stuffed with egg, cheddar, braised greens and Meatsmith ham, and daily salads.
Coffee is roasted in-house by Tim Varney, co-founder of the co-roasting workspace Bureaux Collective. Other beverage options include water kefir from The Fermentary, hot chocolate from Hunted & Gathered and a selection of Assembly teas.
