The hotly-anticipated opening of Stuart Park’s Guzman y Gomez on Tuesday has been hit by another delay with the new opening date pushed back a week to July 4.
A spokeswoman for the Mexican food chain said the postponement was a result of “unforeseen circumstances”.
Construction on the takeaway restaurant began last year on the site of the old Darwin Suzuki, inbound on the Stuart Highway, and was originally expected to be completed by January.
Electrical issues meant that was pushed back to August, before it was announced last week the doors would open by the end of the month.
But in a last-minute change, those hungry for Mexican will have to wait another week.
Doors open at 7am on July 4 with $5 burritos and bowls on offer between 10.30am and 10pm.
It is the fast food chain’s second store in the Territory after the Bakewell restaurant opened in 2016.
The Stuart Park restaurant and drive-through is expected to employ about 100 crew, cooks, shift leaders and baristas.
It will neighbour a new $12m Liberty service station on the same site.
A new KFC store is also expected to open across the road in the coming months.
