A NEW cocktail bar serving up drinks with locally distilled gin has opened in Darwin’s industrial district.

Willing Distillery, a gin distillery in Winnellie that launched its cellar door in late April, expanded with the addition of a cocktail bar at its Benison Rd premises last Thursday.

Owner David Willing – a former executive director of the NT Fire, Rescue and Emergency Services turned passionate distiller – said the bar would allow his business to showcase its Old Darwin-themed drinks in more creative ways and to a wider audience.

“It expands our ability to serve the public and promote our drinks in cocktails, because all of our cocktails are made with our own locally-made spirits,” he said.

“At the moment we’re just doing gin, but we’ll have other spirits coming online very shortly.”

The Willing Distillery cocktail bar is open from 4pm to late, Thursday to Saturday.
