Sydney diners are fickle beings, which makes pop-ups a smart way to keep chefs on their toes and the public excited.
After running their Pinbone eatery at Woollahra for five years, Mike Eggert and Jemma Whiteman decided to focus on short-term eateries.
First it was Good Luke Pinbone at Kensington serving Chinese and now they’re plating up Italian at Mr Liquor’s Dirty Italian Disco in the drive-through of Merivale’s Tennyson Hotel at Mascot (merivale.com.au/mrliquorsdirtyitaliandisco).
“To keep the diners happy, you have to constantly give them new reasons to come and visit you,” Eggert says.
Eggert’s offerings include tuna crude, fried sardines, bruschetta topped with anchovy and gnocchetti with braised lamb and rosemary.

Pack your thermals and hang out in a freezing room decorated with ice sculptures and a bar made of ice. Sign up for prerelease tickets, $45 for a 45- minute session and drink on arrival.

An izakaya pop-up from Toko and fashion labels Song For The Mute and Nothing, you can shop the collections while slurping truffle ramen and more.
Umami; The Grand Arcade, Bong Bong St, Bowral; until December 30
A mod-Asian pop-up transforms The Grand Bistro on Thursday-Saturday nights, serving up dishes such as Wagyu beef in coconut milk and salt and pepper chicken spare ribs.
Busby’s Bar; Victoria Lodge, Royal Botanic Garden, City; until June 30, 2018
Take in Sydney Harbour all summer long with a bar, named after 19th- century viticulturist James Busby, serving up brunch, lunch, snacks and drinks Thursdays to Sundays.
Nudefish Poke; 178 Campbell Pde, Bondi; until June, 2018
They’re taking over the former Miss Chu site for six months, with new menu additions including poke on toast for breakfast and kids’ mini bowls.
Sesion Tequila Green Room; The Star, 80 Pyrmont St, Pyrmont; summer
Jennifer Hawkins’ tequila brand is front and centre at this pop-up bar open every Friday-Sunday night during spring and summer. Think three kinds of margaritas, including lime and agave, rosemary and grapefruit and pineapple and mint, plus a mocha negroni and more.
The Garden Shed; Australian Museum, 1 William St, City; summer
A cafe with outdoor seating has popped up alongside the museum, serving crepes including mince, cheddar and Napoli sauce and dark chocolate, strawberry and coconut.
Sunday Sous Sessions; May and September, 2018, TBC
Sous chefs from fine dining restaurants run the kitchen for a night, with a creative five-course degustation and matched wines. This year’s events sold out quickly, so book in dates for 2018; May 6, 13, 20 and 27 and September 2, 9, 16 and 23. Venue and chefs to be announced next year.
