Mum’s genius ALDI Easter dessert wins the internet

The main ingredient? A packet of hot cross buns, of course.

There are lots of ways to eat hot cross buns.

Soft and fresh, straight from the bakery, toasted, with plenty of butter, stuffed in your mouth as you settle into the car after a harrowing shopping trip with a two-year-old.

No judgement.

But mum Samantha Gilmore has gotten creative with the beloved Easter treat.

Using ingredients from ALDI, the mum-of-three created a genius Easter dessert featuring hot cross buns, and a few chocolate eggs for garnish.

Mum makes Easter dessert from ALDI hot cross buns

Samantha’s recipe is a twist on classic bread and butter pudding. It has all the components that make desserts great” cream, sugar, chocolate and an entire bag of gently spiced, delectably soft, hot cross buns.

“Who doesn’t love hot cross buns?” Samantha posted in Facebook group, ALDI Mums.

“With Easter just around the corner I decided to make a tasty Easter dessert with a few of my favourite ingredients from @aldiaustralia.”

The simple recipe calls for:

• 6 hot cross buns
• 400ml cream
• 4 eggs
• 1/3 cup sugar
• Chocolate eggs for garnish

The method is simple. Preheat the oven to 150C, fan forced. Whisk eggs, sugar and cream in a bowl. Cut the buns in half and push the bases in to the mixture, allowing them to sit for five minutes.

Using a spoon, scoop the bases out of the mixture and place them in a large baking dish. Dip the bun tops into the mixture, cut side down, then place on top of the bases in the baking dish.

Pour the mixture around the buns and bake for 20 minutes, until the custard has set.

A dusting of icing sugar and some roughly-chopped chocolate eggs are the perfect garnish.

Mums in the group were raving about Samantha’s recipe. "Hot cross bun bread and butter pudding is the best! It is my absolute comfort food," Lindy said in the comments.

She had her own take on hot cross bun bread and butter pudding, adding a few extra elements.

“I butter the hot cross buns, and sometimes glaze the finished dessert with jam,” she added.
