STRUGGLING to make enough money to eat was the determination behind Amandeep Singh opening his own restaurant.
Last November Mr Singh’s dream came true opening The Indian Western Royal Flavours in Sturt Street, the city.
Mr Singh said the idea behind the new restaurant was about bringing two countries together.
“I belong to India but I have Aussie friends so people can bring their friends to the restaurant so they can get to know each other about their food and culture,” he said.
“We know not everyone wants to order Indian food so we want to give everyone more dishes.”
The 28-year-old grew up in a poor family in Punjab before moving to Singapore to study business management.
After moving to Townsville two years ago Mr Singh started his own cleaning business before entering the world of cuisine.
He said during his student days he struggled to live while working as a waiter.
“There was a time when I didn’t have any money to buy food but I didn’t lose my confidence and I had self-belief that one day I would open my own restaurant,” he said.
“So I made up my mind to open my own restaurant so I would have food to eat.”
The restaurant serves Indian favourites like butter chicken and curry but also offers Aussie classics including chicken parmigiana and garlic prawns.
Mr Singh said he hoped one day to support those struggling and provide food for homeless people.
