The owners of a popular Cairns fast food joint say it’s time for the next generation to take over as they put the business up for sale.

The owners of Roti Shack say it’s time for the next generation to take the popular fast food joint forward as they put the business up for sale.
For six years, Christina and David Darwen have been serving up delicious Trinidadian-style roti wraps from their shop on Lake Street, Cairns.
They say the time is ripe to expand the business, which is popular with locals and tourists alike and boasts an impressive 4.8 star rating on Google Reviews, but that they don’t have the energy to do so.
“It’s ready to expand but we’re too old and tired,” Mr Darwen said.
“Someone else can take it to the next level,” Mrs Darwen agreed.
“It’s time for us to hand it over to some younger people.”
The rotis the husband and wife team serve up six days a week consist of a homemade flat bread wrapped around a Trinidad curry.
Mr and Mrs Darwen learnt the recipe from Mrs Darwen’s aunty, who was from Trinidad.
They have seen it all since opening Roti Shack on the corner of Lake and Shields Street in 2018.
“Our proudest moment is every day when a customer tells us how great the food is,” Mrs Darwen said.
“It makes it all worthwhile.”
“Our greatest challenge was keeping staff employed and increasing sales throughout Covid, which we did by staying open and getting creative with advertising and sourcing delivery services.”
