Di Fara Pizza and Harley and Rose collaborate for Melbourne Food and Wine Festival

THERE’S nothing better than eating a piping hot slice of pizza — and in Melbourne this weekend, one of Brooklyn’s most popular pizzerias will be popping-up in suburbia to share the love.

IT’S hard to find a bad spot for pizza in Melbourne — and this weekend you’re in for a treat. New York City’s famed Di Fara Pizza is taking over West Footscray’s Harley and Rose tonight and Saturday, as part of the Melbourne Food and Wine Festival’s fortnight of MELxNYC festivities.

Founder Dom Demarco has been making the irresistible pizza pies at his Brooklyn restaurant since 1965.

And after five decades in the industry, he knows a thing or two about making a good slice.

Customers spend up to two hours lining outside the Brooklyn pizza joint just to get a taste of the giant pizzas — averaging 16 to 18 inches in size.

His daughter Maggie Demarco Mieles said fresh ingredients and the cooking process were key to a delicious pizza.

“It usually takes about 10-15 minutes, from start to finish, cooking it in a 900 degree oven,” she said.

While most authentic Italian pizzas are cooked in a woodfire oven, Di Fara has been using a high temperature commercial oven to achieve a different result.

“A lot of people do compare (our pizzas) to woodfire, as it does cook quickly and it’s similar to a woodfire and gets a similar crust to a woodfire oven.”

Most of Di Fara’s ingredients are sourced from Italy, including the tomatoes, flour and cheese.

“Here at Di Fara we focus on the highest quality ingredients which means we also have the most expensive pizza in New York,” she said.

“A regular margherita cheese pizza would be $30 (US dollars) or at $5 for one slice.”

Ms Demarco Mieles said her father never aspired to be successful.

“He never said he was going to make the best pizza. He just did what he loved and it turned out for him.”

Get a slice of pizza at Harley and Rose in West Footscray on Friday 27 July for dinner only and Saturday 28 July from 11:30am until late.

Walk-ins are welcome. Capacity is limited.
