LICKETY SPLIT

Some of Melbourne’s top chefs have teamed up with artisan gelataria Piccolina to create a range of special edition flavours that turn some of their signature dishes into ice-cream form.

The Piccolina Gelato Project featuring eight chefs across eight weeks launches Wednesday with Lee Ho Fook’s Victor Liong taking over the specials board with his creations including a Jasmine tea and burnt caramel gelato.

The following week Tom Sarafian (Little Andorra) will feature with a yoghurt gelato with Persian saffron, while other chefs include Dave Verheul (Embla), Zoe Birch (Greasy Zoes), Shannon Martinez (Smith & Daughers) and Aaron Turner from Igni in Geelong.

These cool collabs will be available in all Piccolina Gelateria stores, including the Collingwood flagship store and the new CBD outlets on Degraves St and Hardware Lane. piccolinagelateria.com.au

NEW START

Popular Richmond eatery Hanoi Hannah will reopen later this month with a new menu, new chef, new look and new name.

With chef Scott Lord (Sunda, Tokyo Tina) helming the kitchen, New Quarter will offer his take on “Melbourne Vietnamese” at the Swan St restaurant that’s had an Ewert Leaf makeover.

“Richmond has always been the home for Vietnamese food in Melbourne. At New Quarter we are embracing the flavours and history of the area and repackaging it into what we believe is a unique expression of Melbourne Vietnamese,” Commune Group creative director Simon Blacher says, highlighting such dishes as a flat-pressed bahn mi, beef tartare with pho jelly and nuoc cham caviar with chicken toast.

It follows news the Commune Group has taken over the Ilona Staller site in Balaclava, with plans for the Carlisle St restaurant still in its infancy.

New Quarter is scheduled to open on Feb 25 at 79 Swan St, Richmond.
