Dröm Bayswater grows cult following for crescent moon, half moon croissants

This Bayswater bakery isn’t afraid to reach for the stars — or moon.
Suburban bakehouse Dröm (that’s Swedish for dream) has been ‘baking’ its dreams a reality with its out-of-this-world half moon and crescent-shaped croissants since March.
The unique celestial bakes attract long queues and often sell out soon after sunrise.
“They have been our main drawcard over the past three weeks we’ve been open,” co-owner Becky Buada said.
“We get a lot of requests to make more, and we’re trying our very hardest.”
Baker George Dardamanis makes up to 1000 pastries at the bakery per day, and has quadrupled the sales of its signature choc hazelnut crescent moon, salted caramel and mixed berry and custard half moon croissants to keep up with demand.
“We have been overwhelmed by the response,” Buada said.
“Not just from (the interest) of our local community but by having visitors from all over Melbourne and Victoria”.
“We’ve had long queues outside of the cafe, which was overwhelming, but it is a good problem to have.”
The family-run bakery also sells sourdough, scrolls, cakes, tarts, pies, sausage rolls and fresh sandwiches.
The bakery is run by the team who also own The Hatter and The Hare cafe next door; Becky Buada, her sister Coners Buada, brother-in-law George Dardamanis, George’s sister Mary and her husband Vinni Kodladi.
“I think Bayswater and surrounding suburbs such as Knox and Mernda have evolved in the last few years,” Buada said.
“(Dröm) represents what we are trying to offer to the community — baked goods which they haven’t tried before and have only dreamt about.”
