Amatrice Rooftop Restaurant opens in Cremorne

It’s been two years in the making, now the team behind Williamstown’s Sebastian has launched a buzzy new eatery at the top of Cremorne’s tallest building.

It’s been two-years in the making, but elevated Italian rooftop restaurant Amatrice has finally opened in Cremorne.

The vibrant 80-seater by hospo pros Dave Parker (San Telmo Group) and Kelly and Alex Brawn (Sebastian) is perched atop of Cubitt Place on Stephenson Street, joining sister venue Caffe Amatrice which opened on the ground floor last month.

While Melbourne is flush with buzzy rooftop bars, Brawn wanted to stand out from the pack.

“First and foremost — we’re a restaurant, the dining offer is the hero and in equal merit to the view, it’s central to the venue experience,” he said.

“Melbourne is known for its rooftop bars, but (we’ll) be doing things a little differently.”

Housed under a retractable glass roof on the tenth floor, the all-weather venue drinks in both city and Dandenong Ranges views.

Inspired by the Italian mountain village of Amatrice, head chef Vincenzo Di Giovanniello (Bar Carolina, Osteria Illaria) crafts a classic portfolio of Italian eats, including Roman-style egg pastas, lasagne bites, savoury deep-fried pastries (beignet), veal cotoletta, Murray Cod and more.

A whop of tiramisu and raspberry or pistachio-filled doughnut to end is apparently non-negotiable.

For his signature dish, Di Giovanniello sources an egg pasta from Italian village Campofilone touted as the “champagne of pastas”.

“It’s got the highest egg ratio to any other pasta, so it literally melts in your mouth,” he said.
