Victor Aghtan, who helped bring the Hawker Chan brand to Australia, said the chicken dish would sell for $6.80 a serve.

“The taste and the texture of the chicken, it’s very tasty, always moist and tender,” he said.

“We use quality produce, which makes a lot of difference. Everything is made fresh.”

Chan Hon Meng first opened his family style eatery in a bustling, non-airconditioned market in Singapore.

Even before his Michelin nod, word of mouth spread about his food.

“He already had a queue an hour long,” Mr Aghtan said.

“When the queue was that consistent, I suppose Michelin wanted to find out what it was like so they sent a team to try the food.”

Mr Aghtan said the quality of the soya chicken rice and noodle dish would mirror that of the Singapore meal.

“The quality won’t be different. We have had people train in Singapore under his (Chan Hon Meng’s) guidance,” he said.

“Now those people are back (in Melbourne) and Chan Hon Meng will certify the food when he comes to Melbourne.”

Soy sauce chicken is gently poached in stock with ginger and soy sauce, then blanched immediately to give a gelatinous skin texture.

Mr Aghtan is the Australian chairman of Hawker Chan and is also responsible for bringing dim sum eatery Tim Ho Wan to Melbourne last year.

Hawker Chan also has eateries in Indonesia, Thailand and Singapore.
