Springvale’s Country Cob Bakery wins gold in Great Aussie Pie Competition

A newly opened Springvale bakery has taken out top honours in one of the largest bakery competitions in the country. Here’s why their pies are a cut above the rest.

After only being open for six months, a Springvale bakery has taken out top honours in one of the largest bakery competitions in the country.

Ryan Khun and his brother Chan opened Country Cob Bakery on Princes Highway in June last year after successfully running two other stores in Boronia and Kyneton.

The business entered 15 pies in the Great Aussie Pie Competition and took home 14 gold and one silver.

Their top winning pies included seafood penang, slow cooked barbecue beef mac and cheese, scallop mornay, Mongolian lamb cumin, reuben sandwich and Jack Daniel steak pie.

Around 300 bakeries entered and 1500 pies were judged during the three-day competition in Sydney in November last year.

Mr Khun said he was incredibly proud of the store’s achievements.

“This is a massive win for us as we’ve been entering for the last five years,” he said.

“It’s good opportunity for bakers to showcase their skills and see what’s trending at the moment.”

Mr Khun migrated from Cambodia in 2012, following in the footsteps of his brother and parents who were living in Australia.

He worked as a computer technician before he helped his brother in a bakery that he owned in Balwyn.

The pair sold the business in 2015 and opened Country Cob Bakery in Kyneton and Boronia.

The bakery was awarded the title of Australia’s Best Pie Maker three years in a row by the Baking Association of Australia, making them the first reining champions in the history of the Australia’s Best Pie Competition.

But being awarded with highly acclaimed titles didn’t come without its challenges.

Mr Khun said some pies took months to create in order to perfect the taste.

“We love turning proper dishes into pie fillings but sometimes they don’t work,” he said.

“We need to do a lot of trials to see what tastes good and what doesn’t and that requires a lot of research on new flavours and trends.”

Mr Khun says his pies are baked from the heart which allows his business to stand out from the rest.

“They taste good because we use the best ingredients,” he said.

“We put a lot of hard work into creating the perfect pie.”
