Slice Shop in Footscray opens to feed pub crowd

Ever tried 14-hour slow cooked brisket on a pizza? Two chefs have infused their thriving new inner-west takeaway with American barbecue expertise.

Two men famous for American barbecue have added pizza to their portfolio and are offering toppings to die for.

The slices are big, thin and covered right to the edge with cheese.

Steve Kimonides and Raphael Guthrie opened Slice Shop in Nicholson St, Footscray just two weeks ago and already have a keen crowd.

The pair are offering pizza by the slice and by the pie — New York style.

There are seven pizzas and a rocket and balsamic salad on the menu and if you like your cheese, you’re in for a treat.

The New York Cheese comes topped with mozzarella, cheddar, parmesan and taleggio.

“The toppings are pretty classic,” Mr Kimonides said. “Margherita, New York cheese, pepperoni, porcini mushroom.”

And they recently offered a special topped with 14-hour slow-cooked brisket.

The meat connoisseurs met working in a South Yarra restaurant about 15 years ago and launched their catering business Burn City Smokers in 2003.

“We got a rush of blood and decided to start our own thing,” Mr Kimonides said.

Six years later they saw an opportunity to feed late-night revellers, and went for it.

“After we’d finish [at Burn City Smokers] we would have drinks across the road at Mr West but be starving hungry,” he said.

Bars were popping up left, right and centre in the west but punters struggled to find a feed, he said.

So when the lease came up across the road they jumped at the chance to offer food to the Footscray drinks crowd.

“There’s a good food scene in Footscray. We’ve got a good vibe going and there’s a big range of people along the Nicholson St mall,” he said.

Slice Shop is open Wednesday to Saturday 12pm to 10pm, and Sunday 5pm to 10pm.
