Moonee Ponds’ Pane Rustico Bakehouse focuses on ‘old school’ rustic bread

NEW kid on the block Pane Rustico Bakehouse is a foodie’s dream.
Owners Maria Gibilisco and Fiona Sardellis opened the bakery six months ago and sell an array of Italian homemade treats such as cannoli, cartocci and Italian-style doughnuts.

They have an Australian Associazione Verace Pizza Napoletana accreditation as their pizzas are made in true Naples style and this month the pair will introduce a new pizza menu.
But the best reason to visit the cafe tucked behind Mt Alexander Rd at 12 Hinkins St is the bread.
The pair saw a need for unrefined, “rustic” bread in Moonee Ponds.
“It’s old school,” Maria said.
No two loaves look the same and are made with an 80-year-old sourdough starter from the Italian baker who taught the duo how to bake “real” bread. They spent a year perfecting the recipe.
The cafe is open Tuesday to Friday from 7.30am to 4pm and 8am to 3pm on weekends.
