Join the crowds of customers flocking to northwest Victoria to try the Bridgewater Bakehouse’s award-winning vanilla slices.
Bakery owner Theresa O’Toole said a good vanilla slice should have a nice shiny thin layer of icing, a crisp but not too thick or thin pastry and a smooth creamy custard centre.
“We sell on average between 2500-3000 vanilla slices a week and yes we have had many customers come just for the vanilla slice and end up trying many of our other goodies,” she said.
“We do have a secret but unfortunately it will stay a secret but can say good quality ingredients goes along way to making a great vanilla slice.”

The Country Cob vanilla slices, available at its bakeries in Kyneton and Boronia, have been voted some of the best in Australia.
Ryan Khun, who owns the business with his brother Chan, said their vanilla slice had won seven national awards at the Great Australian Vanilla Slice competition since 2017.
“We use the same puff pastry as our famous pie, so this make our pastry very crispy and flaky,” he said.
“The filling is made of light, fluffy and creamy vanilla custard with the right amount of icing on top; this make our vanilla slice one of the best in Australia.”
The bakery sells between 1000-1200 vanilla slices each week.
“As we are famous for our pies and vanilla slice, that’s the reason why people travel all the way from Sydney, South Australia and Brisbane just to enjoy the pie and slices here.
“I think the secret of making the best slice and pie in the nation is using the premium ingredients with lots of love and passion into the baking process.”
