A Vermont cafe’s unique take on European-inspired breakfast and lunch has customers flocking to try its gourmet dishes.
Charcuterie (meat) and fromage platters are available all day at new cafe Dimicks, where Vermont South couple Dimi and Nick Saras are offering brunch with an “antipasto twist”.
They’ve come up with the perfect breakfast option for people who love to try and share a bit of everything.
Designed for two people, their breakfast platter is an assortment of all their best sweet and savoury offerings.
Think pork and fennel sausage, potato rosti, mushrooms, grilled tomato, fruit toast and ricotta, granola and yoghurt, toasted sourdough, eggs and bacon.
Ms Saras said customers were still working up the courage to try the dish, but certainly didn’t regret it once they did.
Dimicks offers a European version of eggs Benedict, featuring prosciutto instead of bacon.
Ms Saras, a chef with Greek heritage, recommends customers also try the ‘To the Brim’ — eggs, bacon, mushrooms, pork and fennel sausage, spinach, potato rosti and tomato relish on sourdough.
“There’s so many delicious things,” she said.
Ms Saras said all the cafe’s meals were quite gourmet, with many featuring high-quality, Italian-made cured meats and sausages.
She said almost all the cafe’s great tastes were made from scratch, apart from the cured meats.
The range of baked goods, including muffins, cookies, scones and slices, are all made freshly in-house, while the cafe also stocks a series of vegan and gluten-free treats.
At Dimicks, those who aren’t particular fans of breakfast can skip typical breakfast food, and opt to enjoy meat and cheese with a wine, beer or cider at any time of day.
Ms Saras said the cafe was also soon to open on Friday nights so customers could enjoy the antipasto platters and drinks in the evening.
She said they were waiting until the weather was a little warmer to stay open later, when they could open their bi-fold doors and offer an alfresco vibe.
Only open since August 5, Dimicks has already garnered its fair share of regular customers offering glowing reviews.

NEW CAFE THE TOAST OF THE TOWN
Ms Saras said she had grown up in the area, and her and husband Nick had decided to take the leap and open their own business.
She has years’ experience working as a chef, while Nick, a builder, put the space together.
They named the cafe Dimicks — a merging of their first names, symbolic of their shared new venture.
“We put our heads together and we created, and he made, and now I’m making,” Ms Saras said.
The cafe, at 14 Boronia Rd, Vermont, is open Monday to Friday 7am to 4.30pm and Saturdays from 8am to 3pm.
