Well Bread and Pastry co-owners Michelle and Stefan Van Der Hoven to open new store at Miami One shopping centre

A Palm Beach bakery will open a new store in a Miami shopping centre, less than a month after another bakery was forced to close its doors.

A Palm Beach bakery will open a new store in a Miami shopping centre, less than a month after another bakery was forced to close its doors.

Well Bread and Pastry co-owners Michelle and Stefan Van Der Hoven will debut their second shop at Miami One on Thursday.

It comes after suggestions Shadow’s Pies and Cakes was forced out of the shopping centre when their lease was not renewed after 18 years of operation.

A Miami One Shopping Centre statement said at the time it was “focused on bringing some new and exciting retailers to the centre”.

Ms Van Der Hoven said Well Bread and Pastry would not be moving into the same space as Shadow’s, but would be going into the tenancy next to the pharmacy and Sushi Train.

“We were approached by the landlords and knew it would be a great location as there is no one like us in the area specialising in artisan-made sourdoughs and pastries,” she said.

Ms Van Der Hoven said she understood locals were upset by the departure of Shadow’s Pies and Cakes Bakery.

“It is always sad to see a local family-owned business have to move away for new ventures,” she said.

“Although we had no idea that their lease was not going to be renewed, it is time for the centre to bring in new businesses and refresh the centre.

“We wish the owner of Shadow’s Pies and Cakes bakery all the best. I am sure that they will be missed by their regulars that they have made over 18 years.

“We hope that some of these regulars will come in and say hi and get to know us.”

Ms Van Der Hoven said classic and almond croissants were the biggest seller at their Palm Beach store, a trend she tipped would continue at Miami.

“People also love our pies and sausage rolls,” she said.

“We have our same regulars every week buying our sourdoughs.”

Ms Van Der Hoven said her husband — a chef turned baker — was passionate about making the bakery’s food using “quality ingredients”.

“Our food is no fuss, with no preservatives or any nasties,” she said.

“So yes, even though your Portuguese tart may be full of sugar, you can be assured that we use the best ingredients with no hidden preservatives.”

While a number of its tenancies remain empty, Miami One also welcomed high-profile eatery Broken Hearts Burger Club in December.
