The plight of displaced Burleigh coffee favourite Nook captured the attention of the Gold Coast, but there’s been a happy outcome for one of its owners.
Marcus Wilkins and partner Olivia Ayres have just opened their first venture together, The Holliday Coffee in Nobby Beach.
Mr Wilkins – who still jointly operates the original Nook in its new home in the Old Burleigh Theatre Arcade – created the stand-alone venture at the side of small bar king Scott Imlach’s new Japanese restaurant Okawari House.
He said Mr Imlach reached out to him a couple of months ago to see if he would like to use the space.
“It has been unreal (since we opened),” Mr Wilkins said.
“All the locals seem super happy we have popped up and they can enjoy a coffee in the winter sun.”
Mr Wilkins said, while it was the first time Ms Ayres had owned her own business, she had been in the industry for years.
“Liv has basically been running cafes for years now so it’s the natural progression for her,” he said.
“She is well organised, thorough and creative so I think she is doing fine.
“It’s great (working with her), we can bounce ideas off one another freely at any time of the day, but in the shop we don’t really talk to one another because it has been super busy.”
Mr Wilkins said a lot of customers from Nook in Burleigh Heads had come to try the new venue.
“It’s hard to break the habit of Burleigh point, but that’s fine we will establish new customers in our new place.”
The Holliday Coffee offers a range of jaffles including spaghetti and cheese or Vegemite and cheese, croissants, sourdough crumpets with macadamia honeycomb butter, cold-pressed juices, iced drinks and, of course, coffee.
