Holy Ship owners Kane and Yvette McCarthy and Jake Ruttley to open new restaurant at Marina Mirage

The team behind a new and unique restaurant say it’s a-boat time to lift the lid on their creation.

The team behind a new and unique eatery say it’s a-boat time to lift the lid on their creation.

Kane and Yvette McCarthy and Jake Ruttley came up with the idea to transform two 1970s timber trawlers into a bar and restaurant three years ago.

Their dream will come to life as they welcome the first diners to Holy Ship at Marina Mirage on the Gold Coast.

Mr McCarthy said their two boats, Austral Eagle and Havana, were stripped back to raw timber and hulls before undergoing a facelift.

He said Austral Eagle now sported a full commercial kitchen, while both boats boasted a 10-tap keg room underneath.

“Sunsets are amazing to watch while floating and bobbing up and down,” Mr McCarthy said.

He said he was excited to share the experience of “sitting on traditional trawlers while eating fresh seafood and drinking a cool beverage watching the boats go by”.

The menu will feature oysters, trawler bugs, prawns, saucy pork ribs, tap wines, beers and frozen cocktails.

“We visit the trawlers every morning to pick up our fresh seafood where possible and source the freshest seafood from around Australia,” Mr McCarthy said.

The trio are no strangers to the Gold Coast hospitality scene, previously owning tapas restaurant Tonic on Chirn, Mount Tamborine tapas bar and cafe ELV525, and Ashmore venue Cafe Open.

Mr McCarthy said they also ran a business called Open Project Group, involved in the renovations of La Luna Beach Club, Glass Dining and Lounge Bar, Koi Dining, Coast Beach Bar and Kitchen, Robina Pavilion and more.

“Not only have we designed and built and run our own venues, we design and build for some of the most well-known operators on the Gold Coast,” he said.

Holy Ship will open Wednesday to Sunday from 11.30am to late. Bookings are recommended
