KIYOMI chef Chase Kojima admits the Omakase dinners aren’t the most profitable events for the esteemed Japanese restaurant — but that’s exactly why you should book it.

When you’re passionate about sharing the exquisite cuisine of Japan, money comes second.

“We’re trying to let the guests have the best experience for the best value — it’s not the smartest move for any business,” Chase laughs.

“It’s not cheap, but for the produce that we’re using, the alcohol pairing that we’re doing, it’s quite good value.

“Where can you have this in the Gold Coast? You can’t. We want people to know we’re doing these types of things.”

Omakase translates as “leave it up to you” and is an 18 (or more) course Japanese degustation held every season at The Star Gold Coast, featuring superior local seafood as well as specially imported ingredients.

“It will be for the people who want an exclusive menu,” Kiyomi executive chef Winson Law says.

“We have quite a lot of local fish that we’re using, then all of the vegetables and some mushrooms are local as well. We always want to challenge ourselves and use all different ingredients.”

While the flavours and textures will be first class, Chase promises the evening will be far from pretentious.

“Personally I don’t like up tight dinners,” he says. “For guests, they’re going to be sitting at the counter so there’s going to be a lot of interaction.”
