IF it looks like an egg, and feels like an egg, it must be an egg, right?
Wrong — Tugun’s premier superfood cafe Niche & Co. has somehow done the impossible and created, from scratch, the Coast’s first vegan egg.
“It’s designed to look and be eaten just like a poached egg, but it’s completely plant-based and dairy free,” owner Haines Osborne said.

“It’s got the exact same texture as an egg and when you cut into it it’s even got a runny yolk that oozes out.
“The white is made of coconut and almond and the yolk is spiced pumpkin and turmeric.
“So it doesn’t necessarily taste like an egg but looking at it, it’s really hard to tell it’s not.” Mr Osborne said although vegans have strong beliefs, they’re still prone to feeling left out when it comes to the breakfast staple.
“So this way they can finally enjoy an egg guilt-free.”
The vegan egg comes as part of a meal, costs $19, and is part of Niche & Co.’s new winter menu.
“It’s a whole meal served with multigrain artisan sourdough, smashed avocado, dukkah, portabella mushrooms stuffed with delicious vegan cheese,” Mr Osborne said.
“A lot of what we do is vegan or vegetarian but that’s not all we are — we just like to keep our plant-based friends happy.”
The cafe sold 25 dishes with the “egg” in two days after it was added to the menu.
