New Gold Coast rooftop bar opens just in time for party season following an extensive renovation

AN overlooked Gold Coast rooftop bar has been transformed just in time for the party season, and delicious share food, creative cocktails and champagne is on the menu.

IT doesn’t take much to lure Gold Coasters to a rooftop bar — there’s something about a clear, warm night and cold drinks that entices us to sip and sup alfresco.

Surfers Paradise’s latest top-floor bistro the Skyline Rooftop Bar offers a swish outdoor lounge area ideal for afternoon knock-offs.

Operating above the longstanding Waxy’s Irish Pub, Waxy’s marketing manager Lisa Knell says Skyline is a nod to a previous tenant.

“The space is actually the old Chevron Hotel,” Lisa says. “They used to have a skyline bar on level one and the owners wanted to bring that back. It was the place to go and meet after work, have a few drinks and go out.”

The Skyline Bar is a relaunch of the recently opened rooftop bar owned by Waxy’s. It’s been freshly renovated, creating a contemporary space to match the modern share-style menu.

“You’ve got Waxy’s downstairs, and you’ve got a really smooth, cool, funky bar up on level one,” Lisa says. “The upstairs venue has been transformed into a beautiful, elegant space with new furniture, great cushions and decor.

“Every Friday and Saturday night we’ll have it open with a really nice share food menu.

“It’s going to be contemporary, yet traditional food that’s trending in New York at the moment.

“(There’ll be) a lobster brioche roll, barbecue pulled duck bao, triple cream brie bagel, tempura garlic prawn skewers. They’re all share plates.

“We want to steer away from a traditional bar menu and try and get some really yummy share plates that people can enjoy.”

The liquid assets include creative and classic cocktails, craft beers and Clicquot champagne.

“The champagne is going to be the focus,” Lisa says. “We’ll have Veuve, Chandon, vintage and non-vintage, a wide range of sparkling wine and French champagne. We’ll be doing some weekly specials and good pricing on the bottles.

“It’s going to be a really relaxed atmosphere. If you just want to have a drink and relax, it’s quite classy. People can mingle with their workmates.

“It’s for the crews from Surfers Paradise to come in, have a few drinks, enjoy some great champagne and funky tunes.

“It’s quite a central location, a place where you can go and feel safe and secure in Surfers.

“It’s on trend, we’ve got festive lighting and a lot of greenery in a modern interior.”

The space, which is available for functions during the week, will host its launch party on November 16.

“We’ve got a pretty stellar list of guests for the opening night,” Lisa says.

“There are lots of functions booked in the lead up to Christmas. It’s holding a fundraising event in December, then the New Year’s Eve party and a New Year’s recovery party on New Year’s Day.”

The Skyline Rooftop Bar is open Friday and Saturday from 3pm to 3am, and Sundays 2pm to 3am at 3206 Surfers Paradise Blvd, Surfers Paradise.
