THE guys who brought a little taste of America to the Gold Coast are taking a little flavour from our city back to the United States.
Shannon and Brandon Pollard have sold their popular Chevron Island restaurant Tribeca NYC and are moving Stateside with plans to open a new eatery.
The project has investors lining up in Los Angeles, Las Vegas and southern California — but the pair said leaving was tough.
“Tears were flowing telling the staff,” Shannon, 39, told the Gold Coast Bulletin.
“Leaving is bittersweet.”
“It is all very surreal,” Brandon, 41, added.
“We are so grateful for all the friendships we made through our business and for all the support we received from our staff, friends, family, suppliers and reps.”
Shannon and Brandon will be joined overseas by their Tribeca NYC business partner and mum Carolyn Thompson when their new restaurant opens.
They also have local support and guidance from one of their closest friends, Heath Walker, a senior marketing manager and the American licensee for The Mad Hueys brand.
“We will be serving American food with an Aussie twist to Americans,” Shannon said.
“Our ribs are better than anything we have ever tried while travelling around the US.
“We created such a great model here that we know we are going to be successful over there.”
Tribeca NYC, which opened on Christmas Eve in 2014, has been bought by brothers Callan and Rhys Rogers-Ellis.
It was business as usual this week with barista-extraordinaire Bronwyn Copping greeting the droves of customers coming in for breakfast, lunch and dinner.
“We couldn’t have found anyone better to hand the reigns over to,” Brandon said.
“They are the perfect fit,” Shannon added.
