Gold Coast restaurant Salt Meats Cheese creates ultimate decadent dish: pasta baked in brie

SAY goodbye to your diet — pasta baked in brie is a thing, and this is where you can get it. It’s a meal which is sure to become ‘legendairy’ around the Gold Coast.

GOODBYE diet — pasta baked in brie is a thing now, and you can get it today at Surfers Paradise.

Italian restaurant Salts Meats Cheese is serving up the carby, dairy goodness every Saturday as part of a set lunch menu, and co-owner Alex Vicinanza said diners can’t get enough of it.

“The people are just going crazy for it,” Mr Vicinanza said.

“We launched last week, we got like 15,000 people reached on Facebook. It was really big.”

INSIDE NEW FRENCH RESTAURANT’S DECADENT MENU

The double decadence is created by cutting the top off a wheel of a 250g wheel of brie, scooping out the insides and adding pasta, before being popped in a fire oven and heated until the cheese is melted.

Mr Vicinanza said there’s two different options available, with one adding a little extra layer of gluttony.

“We can do bacon in the brie, we call carbonara, otherwise we can make it just vegetarian with the cheese,” Mr Vicinanza said.

“We serve at the table in this nice board with dried and fresh fruit.

“The curiosity’s there when it comes out on the table.

“At the moment we do this dish with as an entree between the guests, I have people asking for it as a main.

“You really need to love cheese.”

While France and Italy may have a proud rivalry when it comes to food, Mr Vicinanza said he’s always happy to combine the cuisines of different countries for the love of flavours.

“I would say 80 per cent of the cheese (at Salts Meats Cheese) come in from overseas,” he said.

“We share a lot of food between us. Good food is everywhere.”

The baked brie pasta is part of a cheese spread for $39 and available for lunch at Salts Meats Cheese, Surfers Paradise.
