The summer produce abounds on Tasca’s brand new summer menu with head chef Ashley Kent a committed exponent of the fresh and local movement.
She recommends the stracciatella featuring mozzarella from Byron Bay, served with fresh peach, witlof, fennel and hazelnuts.
Still on the Italian theme, there’s also a pumpkin gnudi (gnocchi made on ricotta instead of potato) with fresh garden pesto featuring basil, chicory, nasturtium leaves, pepitas and a hint of goat’s curd.
“We’re also getting great spanner crab from Fraser Island at the moment which we’re doing with kefir cream, finger limes, red radicchio and grated macadamia,” Ashley says.
And she says the hyperlocal oysters that travel less than 10 minutes to the kitchen door from Terranora are “amazing”.
“It’s a small supplier and we love supporting local small business,” she says. “You have to try them to taste how good they are.”

Summer means lots of berries and new fresh cold-pressed juice combos on Substance Espresso’s all day brunch menu.

“We’ve take the heavier things off the menu and make use of all the great fresh fruit and produce we get at this time of the year,” Leah says.
Keep an eye out too for the weekend fresh juice specials and the summer cocktails on the drinks menu.
Making best use of the balmy summer evenings, Substance is also running its final pop-up burger night for the year on Friday, 21 December — an event that’s becoming a local institution.
