Move over Westfield, the modest yet well trodden Coles Eastgate at Bondi Junction is set to receive a glamorous multimillion-dollar makeover.
The store will boast one of the largest ranges of Kosher products in the country in honour of the expansive Jewish population who call the eastern suburbs home.
Other fancy features of the $1.75 million revamp will include a market-style produce hall complete with a fresh lettuce wall, a gourmet deli, premium coffee station and full range of artisan-style breads as well as new patisseries and specialty cakes.
A Coles Kitchen section for the time poor will take pride of place with more than 100 ready-made style meals across Italian, Asian, Indian and Australian cuisines.
Liquorland next door, which has been temporarily closed, is set to reopen at the completion of the works.
In addition to the internal renovations, the supermarket chain also got approval from Waverley council for a new $70,000 illuminated sign.
Coles NSW General Manager Emma Bridges said there was excitement about the changes.
“Our Coles supermarket at Eastgate Shopping Centre is currently undergoing a major multimillion-dollar redevelopment, with the new-look store to offer more choice and an enhanced shopping experience for residents of Bondi,” she said.
“Our customers are increasingly looking for convenient, healthy, prepacked meal solutions. The new supermarket will feature an expanded convenience range with ready-made meals, snacks and drinks, a brand new deli, premium grab and go coffee, a market-style fresh produce hall, and an improved look and feel.
“We will continue to trade through construction, with the supermarket scheduled to be complete in late September.”
