Forget tiramisu, Marta Osetria Sydney is serving up a Roman version of the classic Italian dessert laden with 13 layers of mascarpone cream, coffee-soaked hazelnut shortbread and rich chocolate sauce.
“The Martamisu has been a menu classic since day one,” owner Flavio Carnevale said.
“It is a Roman version of the tiramisu. It is not a cake, it is softer and creamier.

“It is made with a crunchy, not a spongy, biscuit and there is more texture. The nuts give it crunch then it is a melted dark chocolate sauce; so it is sweet, bitter and textured.”
Carnevale opened Marta, which came in number 48 on the delicious. 100 list of the best restaurants in NSW, in the space occupied by his former restaurant Popolo, which he still plans to re-open in the Sydney CBD.
His mission since this 2017 opening has been to bring the flavours of Rome to Sydney.
“I lived in Rome for over five years and there was nothing in Sydney doing any justice to the Roman cuisine,” he said.

He said Roman cuisine had the simplicity synonymous with Italian food but with “stronger, more precise” flavours.
The popular pasta dishes include cacio e pepe, which translates to cheese and pepper. There is also fried artichoke, sans the Jewish quarter of Rome, as well as a Roman version of a lamb tomahawk.
Another menu favourite is the sour cherry and ricotta tart, served warm, that is a great mix of sweet and sour.
