Coles Eastgate Bondi Junction multimillion-dollar renovation completed
There’s a certain standard the eastern suburbs expects when it comes to retail. But some could argue this redeveloped Coles has taken it to another level, with everything from a self-serve macaron station to an in-store ice cream parlour. But there’s also good news for pet owners too.

A gourmet dog treat bar, macaron station and ice cream parlour with a choice of Japanese mochi or gelato are among the shiny new features at Coles Eastgate which has just completed a multimillion-dollar makeover.
Eastgate has long been a favourite grocery shopping location for eastern suburbs residents who don’t want to risk getting lost in the mesmerising bowels of towering neighbour Westfield.
The $1.75 million investment means the Eastgate Coles now rivals its Bondi Junction neighbour with a premium coffee cart and one of Australia’s biggest kosher ranges among the many highlights.
There is also now a gourmet pet treat self-serve station with everything from dried kangaroo tails to emu bites.
And for those on two legs instead of four there is a self service macaron station.
The often crammed service area has been reconfigured with more check-outs installed and the Liquorland next door has reopened after a period of closure.
Store Manager Emily Manenti said she was thrilled to open the doors of the new Coles this week.
“Customers have told me they’re enjoying the more convenient shopping experience and additional check-outs so they can get in and out quicker,” she said.
“We’ve introduced some brand new features including a premium grab and go coffee station, bigger and better produce hall, a gourmet deli, and a new design bakery featuring a range of artisan-style breads, patisseries and specialty cakes.
“As part of the redevelopment, we’ve also created more than 15 retail new jobs in Bondi, which is great news for the local economy at a time like this.”
In addition to the internal renovations, the supermarket chain also installed a new $70,000 illuminated sign.
Meanwhile at Westfield, the shopping centre is preparing to welcome newcomer IMA Sushi which will open its doors at the end of the month.
The sushi restaurant’s $165,000 fit-out was designed by interior food and retail architects The Great Indoors.
The Sunglass Hut is undergoing a $135,000 makeover and Westfield itself is investing $22,500 in a new welcome gate.
