His leg was saved but he now has two rods in his ankle holding him together.
The court heard the 29-year-old from Riverwood was pulling out of her workplace at a nursing home on King St, Randwick, when she collided with Mr Schubert’s Harley Davidson about 3pm on the Sunday afternoon.
Mr Schubert was flung from his motorcycle and his left foot was partially detatched from his left leg.

Dzikunu has been living in Australia for about three years on a graduate visa and has been working part-time at Montefiore nursing home in Randwick.
She holds a Ghanaian international licence and has never held a NSW licence.
The agreed facts stated she was pulling out of the nursing home driveway in her Toyota when the crash happened.
She started to turn onto the road and collected Mr Schubert who was travelling about 40km/h in the middle of the eastbound lane.
“He tried to swerve to the right into the westbound lane to avoid a collision however the front nearside corner of the accused’s vehicle collided directly with Schubert’s lower left leg causing him to be ejected from the motorcycle and severely injure his lower left leg,” the agreed facts read.
Dzikunu pulled over and called emergency services.
Schubert was still a teenager when he played in the Roosters’ grand final-winning season of 1975, playing at fullback. He also won man of the match in the final that year.
Dzikunu will be sentenced on November 12.
