PATRICK GALLAGHER’S latest watering hole is authentically Irish, right down to the tradies he uses, except for one minor detail — the dunny’s as Aussie as they come.

EVERYTHING except the toilet is shipped over from Ireland when Patrick Gallagher is building a new watering hole.
And the Liverpool site is no exception. He sources the loo from a company in Blacktown.
But everything else, including the tradies, are authentically Irish.
As part of the $1.5 million refurbishment, there is new flooring, furniture, bric-a-brac and more, all fitted by Irish tradies that have travelled the distance to ensure its authenticity.
Patrick Gallagher is setting up PJ Gallagher’s in Liverpool.
Mr Gallagher said everything was pre-made in Ireland, then shipped over for installation.
“We even have our own detailed Irish mural painter who travels the 17,000kms every time we open an Irish venue,” he said.
The Irish pub baron is in the midst of refurbishing The Corner Pub and Liverpool Hotel, on the corner of Macquarie and Moore streets.
It will be unveiled to the public on St Patrick’s Day, Thursday, March 17.
The $1.5 million redevelopment includes a facelift on the exterior, while the interior is a tribute to the typical pubs you’d drink over in Ireland.
With years of experience as a publican, Mr Gallagher opened his first Irish pub in 1999. He said it was his rich Irish history that drove him to being so fickle about their authenticity.
“My great grandfather came here to Australia from Ireland. He built his first pub when he was 25 and my father is a publican,” he said.
“I was going to study law, but I ended up helping my sister out for five years in the pub and stayed. In the 1990s, I took over from my dad.”
Mr Gallagher’s company has owned the site for two years, always with the intention of renovating and rebranding as PJ Gallagher’s.
The 1000sq m site was the perfect place to expand the PJ Gallagher’s brand, Mr Gallagher said.
“There is phenomenal growth out here. We’re in a lucky position and a great spot in town.”
At the opening, two of Sydney’s best Irish bands — Kelly’s Heroes and Matt Jones for Reels — will play traditional Irish music.
There will be Irish dancers, Irish fare and the Guinness will be flowing.
Everything kicks off at noon on Thursday, March 17.
