WOOLLAHRA institution Bistro Moncur will open in Mosman in a coup for the newly revamped Buena hotel.
The acclaimed French restaurant will open in The Buena next Thursday.
Mosman will be its first location outside Woollahra.
Top Sydney chef and Public House Management Group culinary ambassador Guillaume Brahimi worked with Public House managing director Mitchell Waugh and The Buena’s part owner Tim Fallon to bring Moncur to Mosman.
The award-winning Brahimi is also an experienced restaurateur and operates several dining establishments in Sydney as well as interstate.
“It’s the perfect match to bring Bistro Moncur into Mosman,” he said.
“It’s terrific; it has the same demographic as Woollahra. I think a lot of Mosman people will be delighted to have Moncur.”
Brahimi said the Mosman restaurant would be “absolutely the same” as the Woollahra original.
Popular menu classics include the chicken liver pate, French onion souffle gratin and Cafe de Paris grilled sirloin.
“The great thing about it is, it’s going to replicate Bistro Moncur Woollahra,” he said.
“We have a great thing working in Woollahra and we know it’s going to work in Mosman.
“It’s going to be a great addition to Mosman.
“I’m really excited to bring such a special venue to a special, iconic building.”
The restaurant will employ 25 to 30 staff and will seat about 110 diners.
Features include an al fresco dining area, wine bar and private room which can be booked for functions.
The restaurant will be open from Tuesday to Sunday for dinner and Saturday to Sunday for lunch.
Brahimi is also expanding his own operations and just opened his first Sydney Bistro Guillaume last month.
He has operated some of the city’s most acclaimed restaurants since the early 1990s when he moved from Paris.
Brahimi’s restaurants have included two-hatted Pond in Potts Point, Quay which held three hats, and the three-hatted Guillaume at Bennelong in the Opera House.
His numerous accolades include the 2013 Vittoria Legend Award for his outstanding long-term contribution to the industry and the 2015 GQ Chef of the Year.
Brahimi currently operates the two-hatted Guillaume restaurant in Paddington and two other restaurants in Crown Resorts, Bistro Guillaume in Melbourne and Perth.
He was also appointed culinary director of Crown Resorts in 2013.
