The Fernery at Mosman set to become one of Sydney’s hottest venues

THE Fernery has finally unfurled, revealing one of Sydney’s most spectacular rooftop destinations.

More than just your average rooftop bar, the lush new venue comprises eight different breakout spaces, including a rosé bar, a gin bar, an urban garden, multiple dining rooms and a Palm Springs-inspired terrace with sweeping views across the city.

Located on the top floor of the old Mosman Club, The Fernery was created by John Tully and Luke Heard, the duo behind The Greens North Sydney and Acre Eatery in Camperdown.

“It was an under-utilised space with incredible potential so we approached the club with an idea to revitalise the offering and turn an otherwise dormant space into a vibrant destination precinct,” says Tully.

Despite being just two stories high, the venue offers spectacular 180 degrees of North Head and Sydney Harbour, including the Opera House and the Sydney Harbour Bridge.

Inside, the new venue is surprisingly glamorous, with blonde wood Danish furniture, speckled ceramics and elegantly draped sheepskin throws, creating the perfect space for a celebratory meal.

However if it’s casual drinking and dining you’re after, try the greenhouse-inspired terrace, an outdoor oasis literally dripping with ferns, with many of the 35 varieties endemic to the Mosman area.

The venue’s on-site restaurant, which is headed up by chefs Gavin Gray and Mitchell Davis, offers a fresh barbecue-style menu, with much of the produce plucked from the rooftop’s own kitchen garden.

“Each dish from the menu contains at least one ingredient cooked in the Josper, which is a wood-burning grill and oven that can reach temperatures in excess of 500 degrees,” says Tully.

“Jospers are widely used around the Mediterranean to impart a subtle smoky flavour to food, plus it’s a very healthy way to cook,” he says.

After getting an inside tour of the Josper, a serve of butterflied Yamba prawns ($35) emerge sizzling in brown butter with charred shells as crispy as chips.

You can either scoop out the milky white flesh or don’t be afraid to crunch the whole thing.

Pair the prawns with a serve of hand-cut zucchini frites ($15) or the crispy fried new potatoes with creme fraiche, pickled onions and freshly picked dill ($10).

Or if it’s a really hot day, why not try the kingfish ceviche with papaya, coriander and coconut chilli dressing ($19) or the rosé soaked watermelon salad ($14) which is tossed with radish, almonds, cucumber and mint.

The Fernery has multiple bars in service, so despite its popularity, you’re never left queuing for long.
