Castlecrag locals flock to new modern Chinese eatery Holy Duck

CHIPPENDALE eatery Holy Duck has flown north, with the launch of a new outpost in Castlecrag’s Quadrangle Shopping Village.
The new modern Chinese eatery was established by developer and restaurateur Dr Stanley Quek, who has plans to completely revitalise the Quadrangle precinct.
“We want to make the area a bit more vibrant, a destination for locals,” says Dr Quek.
Dr Quek is renowned for transforming the inner city suburb of Chippendale. He is also the owner of prominent drinking and dining strip, Kensington Street.
As the name implies, Holy Duck will specialise in duck, with the venue’s crispy duck its signature dish and bestseller.
“Our crispy duck is very different to the Chinese barbecue duck that you find here in Sydney,” says Dr Quek.
“Crispy duck is more common in London, in fact they are famous for it and we really wanted to introduce its unique flavour and texture here.”
Holy Duck’s crispy duck is made by deep-frying the whole bird to give it crunchy, crackled skin and juicy flesh within. The dish is accompanied with a special sauce that Dr Quek smuggled back from London personally.
“I gave the sauce to our chefs to replicate and I think they’ve done a brilliant job,” he says.
The crispy duck is served with steamed pancakes, cucumber, spring onions and hoisin sauce, so guests can make their own duck pancakes. It’s just one of many sharing dishes that appear on the menu.
“We have large sharing plates and small sharing plates, so you’re never stuck with entree, main, dessert,” Dr Quek says.
One of the highlights of the menu is the dim sum, which are supplied by master dumpling makers, Chef’s Gallery.
Guests can pick and choose from a selection of pretty purses, including shiitake and king oyster mushroom dumplings, prawn and water bamboo har gau and the pork broth-filled shao long bao.
The menu does a good job of balancing familiar family favourites, such as the sweet and sour pork, with fun and creative options, such as the beef short ribs with avocado puree.
The new restaurant will also have a fully licensed bar, which will sell its own label of Holy Duck wines, as well as beers and Asian-inspired cocktails.
Locals can either dine in at the restaurant or duck in for some weeknight takeaway.
It won’t be long before the Holy Duck brand spreads its wings again, with a third venue scheduled to open in the city later this year.
As for the Quadrangle Shopping Village, Dr Quek will also launch two more restaurants over the upcoming months.
